{"id":1,"date":"2025-07-18T11:41:45","date_gmt":"2025-07-18T11:41:45","guid":{"rendered":"https:\/\/culinary-insights.de\/?p=1"},"modified":"2025-08-19T18:04:18","modified_gmt":"2025-08-19T18:04:18","slug":"oben_heidelberg","status":"publish","type":"post","link":"https:\/\/culinary-insights.de\/de\/oben_heidelberg\/","title":{"rendered":"Oben - Schaufenster der Jahreszeiten"},"content":{"rendered":"<p><br>In Heidelberg habe ich mein Herz verloren, hei\u00dft es in einem bekannten deutschen Lied - und das zu Recht, denn die Perle am Neckar bietet nicht nur eine malerische Altstadt, Touristenmassen und eine Universit\u00e4t von Weltrang, sondern auch ein kulinarisches Highlight: das<a href=\"https:\/\/restaurant-oben.de\/\">\u00a0Restaurant oben<\/a>\u00a0im Kohlhof, hoch oben auf dem K\u00f6nigstuhl im Kohlhof, er\u00f6ffnete 2017 mit Robert R\u00e4del als K\u00fcchenchef. 11 Pl\u00e4tze im historischen Herrenhaus, ein einzigartiges Ambiente f\u00fcr kulinarisches regionales Storytelling. Und das gelingt, gelinde gesagt, mehr als eindrucksvoll. Das Restaurant ist st\u00e4ndig ausgebucht und es gibt sogar WhatsApp-Gruppen, die um die Pl\u00e4tze \"ringen\". Die Stadt sah in der Er\u00f6ffnung eines \"gehobenen Restaurants\" einen Versto\u00df gegen eine Auflage, die ein Restaurant mit preiswertem Essen f\u00fcr Touristen vorsah. Daraufhin verklagte Heidelberg den Kohlhof-Betreiber auf R\u00fcckkauf, denn Schnitzel &amp; Co m\u00fcsse es f\u00fcr die Tagesausfl\u00fcgler weiterhin geben - im Jahr 2024<a href=\"https:\/\/www.swr.de\/swraktuell\/baden-wuerttemberg\/mannheim\/kohlhof-heidelberg-kompromiss-gefunden-100.html\">wurde vereinbart<\/a>\u00a0dass ein Foodtruck an mindestens 12 Tagen f\u00fcr 2 Jahre ein entsprechendes Imbissangebot bereitstellen w\u00fcrde. Auch eine Fu\u00dfnote und vielleicht ein Spiegelbild der Bedeutung der Spitzengastronomie hier.<\/p>\n\n\n\n<p><strong>Eindr\u00fccke<\/strong><\/p>\n\n\n\n<div class=\"wp-block-group is-nowrap man das Restaurant betritt, scheint die Welt f\u00fcr einen Moment stillzustehen. Es atmet die Patina der Vergangenheit, man f\u00fchlt sich wie in einer Zeitmaschine, die einen in ein Gasthaus des 19. Jahrhunderts versetzt. Der Raum riecht nach Holz, Heublumen und Zitrusfr\u00fcchten. In der Luft liegt das Versprechen eines kulinarischen Abenteuers, einer Reise durch Aromen, Texturen und Erinnerungen, die lange anhalten werden.<\/p>\n\n\n\n<p><strong>Die Mannschaft<\/strong><\/p>\n\n\n\n<p>Chefkoch\u00a0<strong>Robert R\u00e4del\u00a0<\/strong>ist kein Unbekannter: Nach Stationen in Europa und Asien stieg er bei Manfred Schwarz in Heidelberg ein, erkochte sich einen Stern im Simplizissimus, er\u00f6ffnete das oben 1.0 im Landgut Lingenthal in Leimen und \u00fcberbr\u00fcckte die Zeit bis zur Er\u00f6ffnung des aktuellen oben mit einem Pop-up in Mannheim.
